The 3-week point

So as of today, we've been in business for three full weeks (not counting that slightly scary first week when no one knew we were there and we donated what seemed like hundreds of cupcakes to local soup kitchens). But I digress. How's it been going you ask? Well...

It is t-o-u-g-h waking up at 3 or 4 am. Ok, it's tough waking up to turn off the alarm clock at 3 or 4 am. Then again five minutes after that, and five minutes after that. Even for us compulsive bakers :)

I knew we'd lose sleep in this venture, especially in the first month. But I didn't think I'd lose weight. If anything, I figured testing cupcakes everyday I'd gain at least 5-10 pounds for sure. Actually the opposite has proven true. We're so busy, we barely eat. In fact, bites of cupcakes here and there is about all we eat most days.

But you know what makes it worth it? Meeting and talking with all of you each day. No, seriously. We had no idea that we'd like it as much as we do.

I used to enjoy baking in my former life. It was stress relief. A way of staying connected to the bakeshop fantasy. But now that we're living the fantasy, I have to say that while I still enjoy baking, it's taken a back seat to being in that truck and greeting you all, seeing your excited faces, taking your orders and frosting your cupcakes the way you want them. Now THAT is stress relief.

I have to tell you something else that surprised me. My S.O probably knew this as he has a knack for knowing what's what, but personally I never knew men enjoyed sweets as much as women. We get as many men walk up and try our cupcakes as women. True, some are dragged by their wives, girlfriends and significant others but many, probably 75%, come on their own. And since we believe in Equal Opportunity Eating, we hope you guys will please keep coming.

We have lots of exciting things planned for the coming weeks and months. Like a Cupcake Card for you frequent buyers. Additions to the truck to keep you entertained while you wait on line (thank you for waiting!). We'll also be doing more fun promotions. Probably once a month or every other month. So more of you can win free, fun stuff like last week's winner. So stay tuned.

Ooh, for those of you who liked our cookies (like yesterdays Ginger Lemon Cream Sandwiches), we'll have more new and yummy non-cupcake treats in the coming weeks. Don't know what yet. That depends on my whims.




Btw, welcome back to all the students (Yale, Gateway, SCSU, Quinnipiac, UNH and Albertus Magnus — did I forget anyone?). We can't wait to meet all of you! Remember, your brains need sugar.

Wabi-Sabi

The S.O. and I like watching King of the Hill (older episodes). Frankly, we think it's one of the best shows on TV. I could write a tome trying to explain why but suffice it to say, it just matches our sensibilities. We believe in keeping things simple. We believe in loving what you do whether it's selling cupcakes, "propane and propane accessories" or what have you. We also believe that no one and nothing is perfect.

Thing is when you open a business you open yourself and your ideas up to scrutiny. As I've learned, you have to be confident in what you do or you probably won't get too far. Sure, you have to be open to new ideas and criticism and suggestions, but you also have to know your limits. Know that adding a little sprinkle of gold flakes on top of a cupcake can be beautiful. But deep frying a cupcake just might be gilding the lily — not that it probably isn't downright delicious to many people. Point is, sometimes you have to know when to leave things as they are. Learn to find perfection in imperfection. This, I've learned, is wabi-sabi.

According to wikipedia, "wabi-sabi represents a comprehensive Japanese world view or aesthetic centered on the acceptance of transience. The phrase comes from the two words wabi and sabi. The aesthetic is sometimes described as one of beauty that is "imperfect, impermanent, and incomplete." And this brings me back to King of the Hill, one of the best TV shows ever. Did I say that already?

In one episode, Bobby Hill, a young man who knows himself and what he wants — to be a comedian and marry his Laotian neighbor Connie and not much else — wants to grow roses. Once his father, the mite-uptight and straightforward Hank, realizes that rose growing can be a competitive (read: masculine) sport, he agrees to let his son grow them and even gets involved himself...

BOBBY: This one's pretty.

HANK: Not if we go by the book. According to the checklist, this one's perfect.

BOBBY: But I like how mine's a little off-center. It's got wabi-sabi.

HANK: You can't win an argument by making up words.

BOBBY: Wabi-sabi is an Eastern tradition, Dad. It's celebrating the beauty in what's flawed. Like the crack in the Liberty Bell or the mole on Cindy Crawford's face.

HANK: The Liberty Bell is great. But come on, if it was in a competition with a bunch of other bells without cracks, it would lose.

BOBBY: But sometimes it's the imperfections that make you love something even more. So what if this rose is a little short, a little wide? It's got more personality than those other ones.

HANK: Uh-huh. But we're out to win.

We're out to win, too. Who isn't? Being human is wanting to win. No one wants to fail or be left behind, right? But we also want to enjoy the journey. We don't want to get too caught up in the details. In making everything perfect.

Okay. Wait. Let me clarify.

I'm much more of an overanalyzing nitpicker than my S.O. And if it were all up to me, I'd probably run myself and everyone around me (him) ragged trying to make sure every little detail was 100% perfect. Trust me, that's not always a good thing.

But he believes in wabi-sabi. In seeing the beauty in things that are a little off-center. A little to the left or right. A little bigger or smaller than others would say they should be. Because of him, I'm learning that that's okay.

So the next time you stop by and notice something that's not 100% perfect, like our trusty old truck itself, I hope you will appreciate its essential Wabi-Sabi-ness. We do.

When life gives you yolks...make chocolate tarts

We always have way more egg yolks than we know what to do with. Today we used them to make a limited supply of these yummy treats loaded with FIVE kinds of chocolate — dark, milk, white, cocoa powder and chocolate liqueur.

Frequently Asked Questions

What do you do on weekends?
We try to sleep as much as possible. Doesn't seem to work as we find ourselves waking up at 6 or 7 am. Which is fine with us actually as we like going for early morning walks or drives. But we also give the truck a thorough cleaning out, take stock of the past week and prep for the coming one. There doesn't ever seem to be enough time.

How do you like working together?
We really enjoy being together. And it's a dream come true to be able to do something that makes us happy and that makes other people happy together.

Where'd you find that great truck?
Around the corner from our house. It was pure serendipity.

Do you bake your goodies at home?
No. We bake them at a commercially licensed kitchen about 15 minutes from home. The folks who run the place are great to work with, and they were right from the beginning when we asked them if we could use the kitchen way back November last year.

What's in your cupcakes?
Really good stuff. All our cupcakes have all natural or organic ingredients, no artificial anything (except for our Red Velvet, which has red food color). We use local milk, eggs and cream. We use award winning European-style (high fat) Vermont butter and unbleached flour. We highlight these simple ingredients with premium Madagascar vanilla, Belgian chocolate, natural high fat cocoa, French sea salt, lemon puree and candied flowers (hey, I had to do something with that French degree), Vietnamese cinnamon and Grenada nutmeg.

Do you have drinks to go with your cupcakes?
Yup. We have water, soy milk (chocolate and vanilla), organic milk (chocolate and vanilla), frappuccino, Yoohoo, hot coffee — from locally roasted organic beans — and starting in September, we'll have a new drink we think you'll like.

What your favorite cupcake?
Hmmm. I think the S.O. likes 'em all. I like our Chocolate Ruin with our silky, smooth Vanilla Buttercream. I think Sweet Potato Pecan is my second favorite and though most people like it with our White Chocolate Cream Cheese Frosting, I actually like it without frosting.

The "Red Velvet" Truck

You're getting the hang of this, right?

In the mornings, you'll wait anxiously (I hope) to hear from me, while I wait anxiously in front of two ovens for my cupcakes to be ready. While I wait anxiously in front of two mixers for my toppings to be just right. Only when everything's perfect enough for you will I be able to tell you what I have and where I'll be.

Then, later in the day, I'll try to get back here and tell you a little of my thoughts and the day's happenings. All in the spirit of continuing to share with you how our little business is doing and maybe inspire you to follow your dream.

Speaking of which, I have to say that it feels great that you've started to follow our truck around town. That you're looking for us, expecting us, ambushing us the second we drive up and waiting patiently for us to set up shop. Calling us to find out if we've left. Coming back for more and bringing your friends. And that you can't get enough of our Red Velvet cupcakes. Who'd have known?

I'm not sure what to title this post

Should I say "Yeah! We sold out today!" Or should I say "Holy %&@#$, I'm exhausted?"

Both are true and one makes me very happy and the other, while expected, is not fun. This is really physical work, and as I said to a friend today, nothing like earning a "cushy" living — relatively speaking — sitting on your tush all day. All you dreamers and potential street vendors, take note: THIS IS HARD, HARD WORK. The idea of working your butt off for 16 or more hours and then doing it again the next day can't scare you off.

But it will try. Oh, yes, it will try.

Thanks everyone who made today such a success. Thanks to our "regulars." Yes, I do remember your faces and your names (Quinn!), those of you who stopped by before. How could I forget you?

Btw, since our Red Velvet Jones is looking like it'll be very popular, we plan to add it to our daily menu along with our Chocolate Ruin. Don't blame me, I tried to tell you they would do you in.

I (heart) that truck


Mind you, getting it road-worthy has been exhausting and bank account depleting but I am so proud of how cute it turned out. Seeing it parked on the street and smelling its warm yumminess — that heady mixture of sugar, butter, vanilla and chocolate — makes me feel all warm inside.

Apparently, and this from the S.O., it's a beast to drive. But ain't it a beauty for what was once just an old work truck? We think so.

Our official website

Maybe you've been checking out this blog and wondering, "so what's up with the website-website?"

I can't blame you for wondering, but really you can't blame us for taking a different approach with this blog. After all the whole idea of a "mobile bakeshop" is a little unorthodox wouldn't you say?

Still if you're one of those people who would really rather not hear all about our cupcake capers and just get to the usual website stuff — you know: menu, prices, drool-worthy pictures, about us, location, how to order, etc. — take heart. Our website is coming very soon. Could be as soon as next week.

I'm no frosting addict

Personally, I like to have my cupcake and my frosting, too.

But apparently some of you out there like your cupcakes "au naturel" and some of you just want the frosting. You know who you are!

So, in addition to our mix and match menu — you choose whatever frosting you want on your cupcake — we will be offering frosting shots. Yep, straight shots of frosting.

Go ahead and ask for it. We won't tell anyone about your...um...habit.

We'll be back next Monday

I won't lie to you. It's frustrating to not be able to go out again today, but it just can't be helped. We need to take the next few days and rethink some things. The logistics of this kind of operation require a LOT of thought. We're so close but that's just not good enough when you're going for perfection.

Please stay with us. We've put too much energy, money and time into this to give up now. We just have to get past some back-of-the-house issues.

Speaking of signs

It's a good sign when someone calls you to say that a friend bought them some of your cupcakes and they were the best they'd ever had. And that they'd tell everyone they knew.

Or when you drop off LOTS of boxes of cupcakes to a soup kitchen and the wonderful young ladies (Yale students, I think) who are hard at work making lunches and dinner for their guests get really excited about the arrival of a cupcake bakeshop in the area.

Those are good signs, right?

Rain check

Frankly, I blame it on the Weather Channel.

We had to make a call at the crack of dawn about whether to bake hundreds of cupcakes and take our show on the road. It was pouring. And it looked like it would be pouring for a large part of the most critical part of the day. That's what they said anyway. So we said to ourselves at 5:30 in the morning "who's going to be sloshing about in the rain buying cupcakes?" And we stayed in. Then a couple of hours later, the rain stops and the sun comes out and there we are.

We're learning all about the vagaries of business. I guess the weather is one of them.

On the other hand, we're hard at work printing flyers and more signage and finding wholesale accounts to help pay the bills and get our cupcakes out to more people who might not otherwise stop by the truck.

The sun will come out tomorrow.

In case you were wondering...

...what we do with any leftover cupcakes — or in a case like today, fresh baked but unable-to-be-sold cupcakes — we donate them to various soup kitchens here in Hamden and New Haven.

Personally I like the idea that homeless or less fortunate people in our area can also enjoy really good quality yummy treats.

Truck Woes

Folks, the truck needs some minor "tweaking" so we're forced to take the day off and work on it. I keep forgetting that with 38 years under its hood, this truck is older than we are.

Man, what a ride!


Thanks to everyone who stopped by our little mobile bakeshop. Special thanks to Ivy for being the first person to stop by, to Robin who bought a gift box of assorted cupcakes and came back later to buy a chocolate cupcake for a co-worker. To Red :) who came with her co-worker, and to the nice woman who bought a chocolate cupcake and came back a couple minutes later to tell us how good it was. (Btw, I agree. That's gotta be my favorite chocolate cake ever!)

And to everyone else who said hello, took a card, asked a question or tried our cupcakes, thanks for making today such a milestone.

I'm too tired to type more but I will give you the blow by blow as the week progresses.

We were this close...and it felt good

Today I could almost see the line of students, workers, visitors and kids waiting patiently outside the truck to buy our cupcakes. I could see the smiling, friendly faces and hear their questions. I saw us taking orders, boxing and bagging cupcakes and making change. I saw the start of something really cool. I also saw just how much work this would be. I have no illusions. This will be a LOT of work.

For someone who's used to making a living by sitting at a desk thinking and writing or in meetings schmoozing and selling, spending hours alone (or side by side with my S.O.) in a quiet kitchen at 5 am is very different. But I really loved it. I loved being in the kitchen, not thinking about anything except following my recipes and what the rest of the day would bring.

I won't lie to you, it was a little hard getting out of bed at 4. It was hard standing up in that hot kitchen for 5 and a half hours straight. It was hard figuring out the things that aren't yet moving like clockwork. Doing damage control on the little things that went wrong. But it was easy to see how much better it will be. With time and patience and perseverance.

I hope I have enough of all three to get through the next month.

Looks like we have to wait till Monday folks

You can work as hard as you can and give it your all but sometimes things just don't work out the way you want them to.

Bottom line is we want this to be right right from the start, so we have to give it a couple more days in the oven.
